The E61 group head
The E61 group head has achieved an almost mythical status amongst coffee lovers. Invented in 1961 by Ernesto Valento, to install on the machine that bears his name, this group head is still widely used today, and it is still as revolutionary as it was when it came out in 1961. With 4 kg of brass giving it impressive thermal inertia, the temperature stability of the E61 Group Head is unbeatable. The thermosiphon system of the group circulates water continuously, so that it always maintains the right temperature.
Finally, mechanical pre-infusion is created by the pre-infusion valve so that coffee is gradually immersed in water, significantly reducing channeling compared to machines without pre-infusion.
The advantage of a dual boiler machine
The Rocket R58 is equipped with two boilers: a 1.8 L reservoir to produce steam, and a 580 mL reservoir for the espresso extraction itself, which can be controlled independently thanks to an electronic PID controller. This makes it possible for ambitious coffee lovers to experiment with brew temperatures without affecting the steam production. You can do this with the R58 dual boiler machine, whereas with a single boiler machine you have to reduce the steam production if you want to reduce the brew temperature, but with this it will produce as much steam as you want, as long as you want!
What is a PID controller ?
PID is an acronym that stands for Proportional-Integral-Derivative. Technically, it is a processor-based temperature controller that continuously corrects for any error between the target value and the actual value of the temperature; using the three mathematical methods in its name. You can read all about how it works on its Wikipedia page but, for the non-engineers amongst us, suffice it to say that it is the most precise method for controlling the temperature, for any machine, and is much more sophisticated than a simple thermostat. The PID on the R58 is controlled using an external control box, allowing you to control the brew or steam temperature independently on each boiler. This ensures the temperature is always perfect for making your coffee, whether the machine has been idle for hours, or is doing thirty coffees in a row. This stability also makes it a perfect machine for small offices or even events.
The advantage of a rotary pump : capacity, durability and silence
A rotary pump, unlike the standard vibration pump, is what you usually find inside the commercial machines at your favourite coffee shops. The principle advantage to this type of pump, besides that it runs almost completely silently, is that you can connect it directly to the plumbing so that you will never have to fill a water reservoir again! You can also connect the water drip tray to the drain, so you never have to empty that ever again either. Another advantage of connecting your machine directly to your house’s plumbing is that you can use an inline water filter to improve the water quality, ultimately improving the quality of the extracted espresso. Last but not least, the rotary pump is much more durable than a vibration pump.
